Was not really sure if I should post this recipe for Amaranth Blueberry Yoghurt since for me it is not really a recipe but some people did ask me and the picture is so beautiful that I believe it is nice to have on here. A lot of people have no ideas about delicious and healthy breakfast ideas. I still know a lot of people that have sugary cereals or mueslis and still believe they are doing a good thing for their body. Sorry I am spoiling the fun but you are not. You do get some quick energy in the form of sugar but will drop as fast as it has risen and you will feel sluggish. Therefore I do recommend a mixture of fibers, protein and carbohydrates with a very low glycemic index, like this Amaranth Blueberry Yoghurt.

Amaranth Blueberry Yoghurt

- 1 cup Coconut Yoghurt
- 1 cup Blueberries You can use fresh blueberries
- 1 tsp Maca Powder
- 1 tsp Inulin prebiotic, can be bought in health food stores
- 1/2 cup Amaranth Pops
Instructions
- Put all ingredients besides the amaranth pops in a mixer. Mix until you have a smooth yoghurt. If you use frozen bueberries you might need to add some vegetable milk or it can be too thick.
- In a glas first put half of the blueberry yoghurt, then the amaranth pops and after that the rest of the blueberry yoghurt. Decorate with some fresh fruit and maybe like I did some granola.
