Who does not love a good coleslaw. While most coleslaw’s are swimming in regular mayonnaise this Vegan Kohlrabi Coleslaw has a nice, creamy vegan version. The mayonnaise is made from flax seed. This might sound surprising but on the other hand you might use flax egg for baking. Further green apple gives the salad a nice, fresh juiciness.
Kohlrabi is a very German vegetable. During my childhood it was nothing I liked very much. To me kohlrabi had this very strong cole smell and taste. Nowerdays it is one of my favorite vegetables. Kohlrabi is so versatile. It makes a great snack, can be eaten with some great dips like my Beetroot Dip or some Homemade Hummus.

Most of you probably have flax seeds and cashews in their pantry therefore it is easy to make this great mayonnaise. Sure you can also use homemade mayonnaise with eggs or store bought mayonnaise.

What do you need for the Kohlrabi Coleslaw?
- 2 Kohlrabi
- 2 Green Apple
- 5 Carrots
- 15 Red radishes
- Sea Salt – For seasoning
- Black Pepper – For seasoning
What do you need for Flaxseed Mayonnaise
- 1/4 cup Cashews
- 2 tsp Flaxseeds – Ground
- 1/2 cup Grape seed oil – or any light tasting oil
- 1 tbsp Lemon Juice
- 1/2 tbsp White Wine Vinegar
- 1/2 tsp Mustard
- 1/2 tsp Agave Syrup
- Sea Salt – For seasoning
- Black Pepper – For seasoning
Instructions
How to make the Kohlrabi Coleslaw?
- Peel your kohlrabi and carrots, wash your radishes and apples . Julienne all your vegetables and put them in a bowl.
- Add your mayonnaise to the salad and out it in the fridge for at east half an hour. Before serving taste and season, if needed, with some more salt and pepper.
How to make Flaxseed Mayonnaise?
- Add all ingredients besides the oil in a mixer. Turn the mixer on, mix for 30 seconds, then start to slowly adding oil.
- Be careful to not add too much oil at once. Add oil until your mayonnaise has thickened. Mix for around 30 seconds longer to make sure all ingredients are incorporated well.
